Krakow's Old Town does not often get a genuinely interesting opening, so note the date: days ago, at ul. św. Tomasza 4, a new Polish restaurant called Słońce quietly switched on its lights. The name means "sun", the tagline promises that "the sun rises on the plate and never sets", and behind the poetry sits a very concrete idea: the Sunday Krakow dinner, served every day, without the folksy kitsch that usually comes attached.
The kitchen's opening statement is confidence in slow things. Pierogi are rolled and folded by hand in open view of the room. The broth, a guinea fowl rosół with veal kołduny, simmers for six hours because, as they put it, four is not enough. The menu reads like the canon rewritten by someone who has eaten well abroad and came home anyway: herring with herbed cream and pickled apple, kaszanka on burnt onion with cider sauce, duck pierogi with redcurrant, a whole roast half duck, veal schnitzel with parmesan sauce, and a seasonal page that currently features zucchini flowers stuffed with oscypek cream.
Prices sit where Old Town ambition usually sits: pierogi 34 to 54 zloty, starters around 29 to 41, mains from 49 for the vegan bigos to 108 for the entrecote. Desserts stay under 35, including a house signature called, of course, Słońce: dark chocolate mousse with apricots and pecan praline. There is a garden for walk-ins, indoor tables book online, and the room runs daily from noon to ten.

Context for visitors: św. Tomasza is the quiet-ish lane two minutes north of the Main Square, already home to Milkbar Tomasza from our breakfast guide. If Słońce holds its promise, the street quietly becomes Krakow's best address for Polish food across two price brackets, which is the kind of sentence we will happily verify in person.
